Olympics Inspired Drinks: The Rio De Ja-Tini

My daughter Camilla just turned 1 and boy am I glad that party has come and gone!  I swore to myself that I wouldn’t go overboard and I as much as I tried, I failed…and justified it by telling myself  “you only get one first birthday”.  Now that that spectacle is over, I am on to the next and am planning for my Olympics opening ceremony watch party which I am pretty excited about!  The best advice I can give for planning parties is to start getting things together a few months in advance that way you can spread expenses and projects out over time.  My first stop in the planning of my Olympics watch party just so happens to be at the drinks (whoop, whoop!) I love a good rum drink and this one calls for two different kinds!  This cocktail is in honor of Brazil, the host country of the 2016 Summer Olympics. I am calling it the “Rio De Ja-tini” because the colors reminded me of the Brazilian flag and the blue reminds me of their beautiful coastline and beaches. Making the Rio De Ja-tini was really fun for me because I, in my 32, years had never used a cocktail shaker!  By the time I made one for me and a couple for my friends to try, my husband had to pry me off the shaker, haha! This was definitely a crowd favorite and tons of fun to make and watch the layers form.  Not only does the Rio De Ja-tini look beautiful, but it tastes fabulous too.

Rio De Ja-tini

Ingredients

  • 2 oz. Rum
  • 1 oz. Coconut Rum
  • 2 oz. Pineapple Juice
  • 1 oz. Cream of Coconut
  • 1/2 oz. Blue Curaçao

Instructions

  1. Combine both rums, pineapple juice, and cream of coconut in a cocktail shaker filled with ice.
  2. Shake well and strain into a martini glass.
  3. Slowly pour blue curaçao down the side of the martini glass to create the layered effect.

  1. Yum! I will definitely be trying this! I wonder if I can substitute the cream of coconut with a little Coco Lopez...if so I've got all the ingredients NOW!
