Mother’s Day Recipe: Crock-Pot French Toast + Breakfast In Bed with H-E-B

I love Mother’s Day!  This will be my second year to celebrate as a mom and I have to say it’s one of my favorite holidays.  Cam makes me breakfast, Cami makes me a card that undoubtedly has her hand print on it, and I am queen for a day. My requests for gifts on Mother’s Day or any gift-giving holiday are usually pretty simple and practical (especially as I get older).  This year I had my eye on an attachment for my KitchenAid mixer that allows you to make fresh fruit juice in a flash.  Of course,  I want the fresh juice on Mother’s Day so obviously I needed to get the attachment before then so that I would have the juice I craved come May 14th!  Sometimes a girl just needs fresh juice!  After heading to heb.com I found my juicer attachment and a few other KitchenAid utensils I needed that seemed like practical Mother’s Day gifts…to myself.

I don’t know what it is about Mother’s Day but I feel like this day in particular should always involve breakfast or brunch.  As a kid I remember always going to church with my mom and then taking her to brunch afterward.  Most days out of the year she cooked home cooked meals for us, but on this day we took her out.  Now that I am a mother, I get it. Who wants to cook on Mother’s Day?!  Not matter what your Mother’s Day traditions are, whether you are a mom or you have a mom, I’d like to offer up this recipe for Crock-Pot French Toast that you let cook overnight and then, presto!  You wake up in the morning and the slow cooker has done all the work!  Treat yourself or your mom to breakfast that prepared itself the night before.

Crock-Pot French Toast

Ingredients

  • 1 Loaf of Bread (I used French bread)
  • 7 Eggs
  • 2 1/2 cups milk
  • 1 tsp. Cinnamon
  • Fillter & Topping
  • 1/2 cup Softened Butter
  • 3/4 cup Brown Sugar (firmly packed)
  • 1 1/2 tsp. Cinnamon

Instructions

  1. Spray crock-pot with cooking spray and cut bread into cubes
  2. Place half of the cubed bread into the bottom of the crock-pot
  3. After mixing all ingredients together of the filler & topping, pour half of the mixture on the the bread you've placed at the bottom of the crock-pot
  4. Place the remaining bread on top of the mixture
  5. Mix remaining ingredients in a separate bowl well making sure the eggs are fully beaten and incorporated with other ingredients.
  6. Pour egg mixture on the second layer of bread
  7. Pour the second half of the filler & topping on top
  8. Cook on LOW for 6 hours

I got my bread for this recipe at H-E-B and their bakery department was able to slice the French loaf for me (which saved time in the preparation the night before).  The texture of Crock-Pot French Toast is comparable to that of flan.  If you or your mom is a “texture eater”, this one might not be up your ally.  The cinnamon taste is divine and when you wake in the morning to eat it, your house will smell amazing!  The recipe cooks this meal on low for 6 hours, however, it is ok to leave the crock-pot on warm until you wake up.
