I have to admit, I am a sucker for sweets!  Not only is eating (and drinking) them my weakness, but I also love making them.  Sometimes when I am planning game day food I have to remind myself to have a menu that includes savory snacks too!  Last year for a Super Bowl watch party at my friend’s house I was in charge of bringing the sweets (obviously).  Among the three options the game day recipe that I am sharing with you today was the crowd favorite.  At the time I used Funfetti cake batter which was fine, but those who know me know that I generally like to stick with themes and color schemes when I plan for a party. So I decided to tweak my recipe to embody a football theme with these super cute and especially delicious (kid and adult approved ) Football Whoopie Pies.

To create these game day treats I solicited the help of one of my best friends’ nieces, McKee.  She is super cute and if you know a thing or two about  kids you know they are going to keep it real with you, especially when it comes to food.  To make the football sandwich I used chocolate cake mix (I used Sara Lee super moist chocolate cake).  Do not follow the instructions on the box.  Follow the recipe listed below which will turn out light and fluffy little cookies.

For the creamy center of your little sandwiches you will use frosting (I used Pillsbury cream cheese frosting.) Frosting the inside is super easy!  Scoop your frosting into a gallon sized zip-lock baggie and cut one of the corners.  Squeeze the frosting onto the flat side of one of the cookies in circular motions…

…or you can just squirt it in the middle McKee-style!

Add the top of your whoopie pie to the bottom part you just frosted and ta-da, your sandwich is made!  Cute, right?!!

Now it’s time to make it look like a football!  I enjoyed this part, but McKee wasn’t interested.  She is all things girly, twirly, and ruffly and wasn’t interested in footballs AT ALL!  She went straight for the eating part.

As you can see the these are a hit with kids!  And yes, McKee wakes up like this.  In dresses and dress shoes for a day hanging out at the house with her aunt Jill and Jill’s blogger friend.  I need to be taking style tips from her now that I think about it.

To pipe on the football detail I used Wilton Decorating Icing in white which you can locate on the cake aisle at the grocery store or on Amazon.  I found it to be super easy to just grab a bag and go and not have to worry about getting fancy tips or piping bags.  This was all in one!

And I 100% agree with McKee, these are really delicious!  They are light and go great with milk!  My husband REALLY loves these and have proven to be a “fan favorite” at game day watch parties this year.

Game Day Recipe: Football Whoopie Pies

Ingredients

  • 1 box chocolate cake mix
  • 1/3 cup water
  • 1/2 cup vegetable oil
  • 3 large eggs
  • 1 can frosting of choice
  • 1 bag Wilton decorating icing (white)
  • Parchment paper

Instructions

  1. Preheat oven to 400 degrees and line a baking sheet with parchment paper.
  2. Mix cake mix, eggs, water, and oil in a large mixing bowl on medium speed until fully combined.
  3. Drop batter using a small cookie scoop or spoon on prepared baking sheet and bake for about 6-8 minutes or until tops spring back when lightly touched.
  4. Remove to a wire baking sheet to cool.
  5. Once cookies are cooled, frost the flat part of half the cookies then top with another cookie.
  6. Decorate tops of whoopie pie with football "laces" with white decorating icing.
