Election Day Cocktail: Pudding Shots with Sugar Cookies

I can not believe that election day is finally upon us! Whether you are right, left or somewhere in the middle I think we all can agree that it’s a good time to have a drink! I remember at the ripe age of 19 when I voted in my first election. I was more concerned about who had the better looking suit and sincerest smile than being informed. This year I was pretty determined to really look into the issues I cared about and make a thoughtful decision on who would be the better choice. In my quest I got side-tracked and decided to come up with a cocktail, which was actually a really easy choice to make when I came across these adorable elephant and donkey cookie cutters from Francesca’s. I may still be weighing my options with the candidates but one thing I know for sure is that come election day my cocktail party is going to be on point!

Knowing that I wanted to make sugar cookies with my political cookie cutters, I wanted to think of something out of the box for my election day cocktail party. Being that this election will go down in history as having the most “interesting” of candidates I figured my recipe should call for something a little stronger…vodka…that should do it! When I was a kid my mom would make chocolate pudding garnished with lady fingers (pretty fancy for a 5-year- old) but I loved it. With the help of a little food coloring, white chocolate pudding can be transformed into festive election party shots that even both parties could agree on as being delicious and pretty stinking cute!

Sugar Cookie Pudding Shots

Ingredients

  • 1 box white chocolate flavor instant pudding (I used Hershey’s Pudding)
  • 1 cup COLD milk
  • ¾ cup vanilla vodka
  • 2 tbsp. amaretto liqueur
  • ½ cup whipped cream
  • Red & blue food coloring

Instructions

  1. Pour the pudding mix in a medium bowl and add the cold milk. Beat mixture for 2 minutes.
  2. Add the vodka, a ¼ cup at a time, combining completely before each new addition. Stir in amaretto and the whip.
  3. Divide the pudding mixture equally into 3 bowls. Tint two of the bowls with the red and blue food coloring, until the pudding reaches desired vibrancy (for me it took 16 drops of blue, and28 drops of red).
  4. Layer the colored puddings in shot glasses as desired and top with whipped cream.
